The vegetable salad is an alternative take on the classic potato salad. This is super yummy, and I highly recommend trying it out.
- 1 cup of cucumbers, chopped
- 1/3 cup of tomatoes, chopped
- 1/3 cup of red onions, minced
- 1/2 cup of arugula
- 1/3 cup of greek olives, sliced
- 2 tbsp of vegan mayo (I use vegenaise)
- 1 tsp of dijon mustard
- Combine all the ingredients until the mayo and mustard is thoroughly incorporated.
