Vegetable Salad

The vegetable salad is an alternative take on the classic potato salad. This is super yummy, and I highly recommend trying it out.

Vegetable Salad

Ingredients

  • 1 cup of cucumbers, chopped
  • 1/3 cup of tomatoes, chopped
  • 1/3 cup of red onions, minced
  • 1/2 cup of arugula
  • 1/3 cup of greek olives, sliced
  • 2 tbsp of vegan mayo (I use vegenaise)
  • 1 tsp of dijon mustard

Instructions

  1. Combine all the ingredients until the mayo and mustard is thoroughly incorporated.
