Vegetable Panini

This is a very healthy panini without any oils or saturated fat. Make it for snack, lunch, or dinner.

Vegetable Panini


  • 6 slices of cucumbers
  • 2 slices of whole grain bread
  • 4 tbsp of organic hummus
  • 1 cup of leafy greens, variety


  1. Preheat your grill or panini maker. Spread 2 tbsp of hummus on each slice of whole grain bread. This will act as our condiment and substitute for mayonnaise. Add the slices of cucumber and leafy greens and top it with the other slice of bread.
  2. Place on the panini and let cook until the top slice of bread is golden brown. Once it is done, plate and serve with a nice cold glass of organic, unsweetened Almond Milk.
