The is a vegan alternative to the traditional coleslaw that uses vegan mayo.
- 16 oz bag of broccoli slaw
- 1/4 cup of vegan mayo (I use vegenaise)
- 2 1/2 tbsp of lime juice
- 1 tbsp of red wine vinegar
- 1/4 tsp of salt
- 1/3 of coconut milk
- In a bowl, toss together the slaw, salt, lime juice, and vinegar until incorporated. Then add in the vegan mayo and continue to toss together. Lastly add in the milk, continue to toss, then refrigerate until chill before serving.
