Last night while I was laying in bed, I was craving french toast, so I came up with this quick recipe which turned out to be exactly what I needed. Hopefully you will enjoy this as much as I did.
- 1/4 cup silken tofu
- 1/4 cup of non-dairy milk
- 1/4 tsp vanilla extract
- 1 tsp raw sugar
- 1/4 tsp salt
- 1/4 tsp cinnamon
- Add all of the ingredients into a blender and or food process and blend until there are no chunks. Add a non-stick skillet to medium with a bit of vegetable oil on medium heat. Dip slices of bread and coat with mixture for 5 seconds on each side. Add to hot grease and cook both sides until golden brown. When done, sprinkle with powered sugar and serve with maple syrup and fruit.
