This homemade crunchy granola reminds me of the vanilla flavored granola I used to buy from Stop & Shop. It is so good and crunchy, you can even enjoy it as a breakfast cereal.
- 1 1/2 cup steel cut oats
- 1/4 tsp sea salt
- 2 tbsp raw sugar, fine
- 1/4 cup shredded coconut
- 1/2 cup shaved almonds
- 2 tbsp canola oil
- 1/4 cup of maple syrup
- 1 tsp vanilla extract
- Preheat oven at 325 degrees F. In a bowl add the oats and almonds. In another bowl, add the rest of the ingredients, mix well with a fork or whisk until incorporated. Then pour the wet mixture into the bowl with your oats and almonds. Mix until well incorporated.
- Coat a baking sheet with some oil so that the granola doesn't stick. Pour granola onto the baking sheet, and spread it evenly. Place the baking sheet into the oven, and stir the mixture every 5 to 10 minutes until golden brown. Remove from the oven, and place on cooling rack for 30 minutes. When you first remove the granola, it will still be sticky, but after 30 minutes of cooling, it will be crunchy and delicious.
