Like bananas? Like pancakes? Then you will love banana pancakes.
- 2 ripe bananas, mashed
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 2 tsp baking powder
- 1 tbsp raw sugar, fine
- 1 cup soy milk
- 1/4 cup silken tofu
- 2 tbsp vegetable oil
- 1 cup all purpose flour
- In a bowl, combine flour, sugar, baking powder, and salt until well incorporated. In a blender, mix together tofu, milk, vegetable oil, vanilla and bananas.
- Fold in flour mixture into banana mixture with a spatula until well incorporated.
- Heat a lightly oiled griddle or non-stick frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/3 cup for each pancake. Cook until pancakes are golden brown on both sides. Server hot with maple syrup or your favorite fruit topping.
