Banana Pancakes


  • 2 ripe bananas, mashed
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1 tbsp raw sugar, fine
  • 1 cup soy milk
  • 1/4 cup silken tofu
  • 2 tbsp vegetable oil
  • 1 cup all purpose flour


  1. In a bowl, combine flour, sugar, baking powder, and salt until well incorporated. In a blender, mix together tofu, milk, vegetable oil, vanilla and bananas.
  2. Fold in flour mixture into banana mixture with a spatula until well incorporated.
  3. Heat a lightly oiled griddle or non-stick frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/3 cup for each pancake. Cook until pancakes are golden brown on both sides. Server hot with maple syrup or your favorite fruit topping.


So I just made this recipe and added an extra banana because my bananas were small. I also added a bit of cinnamon. Tried to mix the wet ingredients in a bowl, but the author is right. You definitely need to use a blender or food processor to get that creamy consistency.
